Carrot Chowder

Creamy orange carrot chowder in a white bowl, topped with shredded carrots, diced potatoes, and parsley.

Ingredients

  • 1 pound ground beef (browned)
  • 1 cup onion (chopped)
  • 1 cup celery (chopped)
  • 1 cup green pepper (chopped)
  • 2 1/2 cup carrots (grated)
  • 2 can cream of celery soup
  • 4 cup tomato juice
  • 1 1/2 cup water
  • 1/2 teaspoon sugar
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon marjoram
  • 8 slice Swiss cheese
Yield: 8 Servings
Prep Time: 30 minutes
Cook Time: 1 hour

Instructions

Combine all ingredients except Swiss cheese and simmer 1 hour. To serve, place a slice of cheese in the bottom of each bowl and ladle chowder on top. Serves 8-10.
