Broccoli Soup

Smooth, bright green broccoli soup in a white bowl, swirled with cream and topped with fresh chives.

Ingredients

  • 2 tablespoon margarine
  • 1 onion (medium, chopped)
  • 2 package 10-oz. frozen chopped broccoli (thawed)
  • 1 1/2 can water
  • 1 can 10-3/4-oz. condensed cream of potato soup
  • 1 1/2 cup milk
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper
  • 1/8 teaspoon nutmeg
Yield: 8 Servings
Prep Time: 10 minutes
Cook Time: 30 minutes

Instructions

Cook onion in margarine until tender, using a large saucepan over medium heat. Add water to saucepan and bring to a boil. Add thawed broccoli, soup, milk and seasonings. Simmer gently for 15 minutes. Carefully place 1 1/2 cups of hot soup into blender container. Purée until smooth. Return to saucepan.
