Black Bean & Rice Salad

Black bean and rice salad with diced tomatoes, red onion, and cilantro in a shallow bowl.

Ingredients

  • 2 can black beans (16-oz, drained and rinsed)
  • 1 cup cooked rice
  • 1/2 cup red onion (chopped)
  • 2 roma tomatoes (seeded and chopped)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • Salt and pepper (to taste)
Yield: 6 Servings
Prep Time: 20 minutes

Instructions

In mixing bowl, combine beans, rice, onions, tomatoes and cilantro. Add oil and lime juice; toss well to combine. Add salt and pepper to taste. Cover and refrigerate several hours or overnight.
