Banana Nut Cake

Ingredients

  • 3 cup all-purpose flour
  • 2 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 4 eggs (lightly beaten)
  • 1 1/3 cup vegetable oil
  • 1 1/2 teaspoon vanilla extract
  • 1 can crushed pineapple ( 8 oz. size, undrained)
  • 2 cup mashed bananas
  • 1 1/2 cup chopped walnuts
Yield: 16 Servings
Prep Time: 30 minutes
Cook Time: 1 hour 5 minutes

Instructions

In a mixing bowl, combine dry ingredients. Beat in eggs, oil and vanilla. (Batter will be heavy.) Fold in pineapple, mashed bananas and nuts. Pour into a well-greased 10-inch tube pan. Bake at 350° for 60 to 65 minutes, or until cake tests done. Cool in pan 15 minutes before removing to a wire rack. When completely cooled, sprinkle with confectioners' sugar. Yield: 16 servings.
