pie crust (9-inch, unbaked) 2 T
butter 1
onion (chopped) 1⁄2 lb
bacon (cooked and crumbled) 3
eggs (beaten) 1 1⁄2 c
half & half cream 6
Swiss cheese (up to 8 oz, grated) 1 pk
frozen spinach 3⁄4 t
salt 1⁄8 t
pepper 1 ds
nutmeg 1 ds
cinnamon 1 ds
cayenne pepperInstructions
Sauté onions in butter. Spread over bottom of pie crust. Cook spinach and drain well. Spread over onions. Sprinkle bacon over spinach. Cover with grated cheese. Combine eggs with cream, salt, pepper and spices. Pour carefully over cheese. Bake 15 minutes at 425°. Reduce heat to 300° for 40 minutes, or until knife inserted in center comes out clean. Serve either very hot or well chilled.
