Ingredients

all-purpose flour 2 c
sugar 1 t
baking powder 1 t
baking soda 1 t
salt 1 t
ground cinnamon 1 t
nutmeg 4
eggs (lightly beaten) 1 1⁄3 c
vegetable oil 1 1⁄2 t
vanilla extract 1 cn
crushed pineapple ( 8 oz. size, undrained) 2 c
mashed bananas 1 1⁄2 c
chopped walnutsInstructions
In a mixing bowl, combine dry ingredients. Beat in eggs, oil and vanilla. (Batter will be heavy.) Fold in pineapple, mashed bananas and nuts. Pour into a well-greased 10-inch tube pan. Bake at 350° for 60 to 65 minutes, or until cake tests done. Cool in pan 15 minutes before removing to a wire rack. When completely cooled, sprinkle with confectioners' sugar. Yield: 16 servings.
